Lasagna

When I was about 11 years old my uncle got a new girlfriend. This was very exciting to me as I didn’t have many aunts.

With this new aunt came new “exotic” foods, like homemade pizza, tacos and lasagna. Oh how delicious and special compared to the all the traditional dishes my mom would serve us of fish and meat.

To my dads dismay my mom and I started to make these dishes too and even though he now loves pizza, my dad still does not like lasagna or tacos.

This is the recipe that my mom would make.

NORWEGIAN LASAGNA

  • 2 lbs of ground meat
  • 1 tbsp oil
  • Your choice of Pasta sauce or Canned tomatoes mixed with Tomato paste and Italian Spice mix.

Brown the ground meat add your choice of sauce and let simmer for 5 minutes.

  • 8 tbsp margarine
  • 1/2 cup flour
  • 5 cups milk
  • 1/2 tsp nutmeg or white pepper
  • 1/4 cup cheese (swizz or mozzarella)

Melt margarine and whisk in the flour over medium-low heat, cook for 5 minutes while whisking constantly. Do not let it burn. Pour in the milk and add the spice, whisk until smooth and let cook for 5 minutes or until it is quite thick. Add cheese and stir until melted.

In a 13 by 9 inch pan start layering with the meat, then Oven Ready Lasagna, then white sauce. Meat, lasagna, white sauce. Meat, lasagna, white sauce. I can usually depending on the depth of my pans get three layers. Always end with the white sauce.

Cover with aluminum foil and bake at 375 Fahrenheit for 35 minutes. Take out and remove the foil. Watch out it might be a little stuck to the lasagna. Cover the top with cheese of your choice and bake for another 10 minutes.

Serve with garlic bread and a salad.
