Chicken Pie

CIMG3654 This is one of my favorite dishes that is easy to make with leftovers. A little bit of chicken and a few veggies and you have a delicious and healthy meal.

Pie dough

  • 1 1/2 cup All Purpose Flour
  • 1 1/2 stick Margarine
  • 3 Tbsp Ice cold Water

Cut the margarine in the flour either by hand or in a food processor. It will be very grainy. Add the water and mix it quickly to a ball. Put it in the fridge for 30 minutes.

Roll it out quickly between two sheets of wax paper covered with a little bit of potato starch. You can also just press it out in your pie form.

CIMG3647Make air holes in the bottom by using the teeth of a fork. Bake it in the middle of the oven at 400 degrees for 12 minutes.

Filling

  • 3 Eggs
  • 1 3/4 cups Milk
  • 1 tsp Salt
  • 1/3 tsp Pepper
  • 2 cups Grated Cheese
  • My Favorites are 1/2 a Grilled Chicken, Thin Strips of 1 Bell Pepper, 1 Onion and 2 Tomatoes. Anything goes though.

Layer the meat, cheese and the veggies on the pre baked pie crust.

Whisk together the eggs, milk, salt and pepper and pour over the veggies and meat in the pie crust. (at this point I was so hungry I forgot to take more picture)CIMG3646

Bake for 25 – 30 minutes till the eggs are all set.
